Ingredients:

  • 1 cup (225g) unsalted butter
  • 1/2 cup (120ml) honey or maple syrup
  • 1/2 cup (100g) brown sugar
  • 1 tsp vanilla extract
  • 3 cups (270g) rolled oats
  • 1 cup (90g) shredded coconut (optional)
  • 1 1/2 cups (270g) chocolate chips
  • 1/2 cup (120ml) peanut butter or almond butter

Instructions:

  1. Prepare the Pan: Line an 8×8 inch (20×20 cm) baking pan with parchment paper, leaving some overhang for easy removal.
  2. Make the Oat Mixture: In a saucepan, melt the butter, honey, and brown sugar over medium heat. Stir until the sugar dissolves and the mixture is smooth. Remove from heat and stir in the vanilla extract.
  3. Combine with Oats: Add the rolled oats and shredded coconut (if using) to the saucepan. Mix until everything is well coated.
  4. Layer the Base: Press half of the oat mixture firmly into the bottom of the prepared pan.
  5. Make the Chocolate Layer: In a microwave-safe bowl, melt the chocolate chips and peanut butter together in 30-second intervals, stirring until smooth. Pour this chocolate mixture over the oat base and spread evenly.
  6. Add the Top Layer: Crumble the remaining oat mixture over the chocolate layer and gently press it down.
  7. Chill: Refrigerate for at least 2 hours, or until the bars are set.
  8. Slice and Serve: Lift the bars out of the pan using the parchment paper overhang. Cut into squares and enjoy!
